There’s a definite chill in the air and with autumn officially here, our catering partners Caper & Berry have launched a new menu in The Brasserie, so you can savour seasonal ingredients and warming flavours before settling down to enjoy the show. We’ve partnered with our sponsors, luxury English wine producer Gusbourne, to recommend which of their beautifully crafted vintage wines to pair with our seasonal menu.

Laura Rhys, a Master Sommelier and Global Ambassador for Gusbourne, imparts her expert advice: “The Brasserie’s menu is a wonderfully tempting line-up, with some absolutely sensational dishes to pair with Gusbourne wines. Of course, sparkling wines are a delicious aperitif, but they’re often overlooked to partner your meal. But, because English wines tend to have lively acidity, excellent structure and good complexity, they’re actually incredibly gastronomic.” 

For Laura’s first wine pairing, she recommends Gusbourne Blanc de Blancs, a vintage sparkling Chardonnay, which is characteristically elegant, with notes of orchard fruit, citrus and minerality. 

“Alongside the Sea Bass, it would be hard to find a better match than our Blanc de Blancs. The richness from the butter sauce, the acidity from the capers and the salinity from the samphire will make the elegant, citrusy, mineral character of the wine absolutely sing. Wonderful.”

For those looking for an earthy, rich vegetarian option, Laura selects the Squash & Sage Tortellini. “Once again, there’s an absolutely incredible Gusbourne match with this dish,” says Laura enthusiastically. 

“Our Brut Reserve is a wine made for autumnal flavours, and this dish fits squarely in that bracket. The squash’s earthy sweetness will highlight the rounder fruit character of the wine; meanwhile the toasted pinenuts will bring out the nuances of lees ageing – the weight, roundness and toasty complexity of this cuvée.”
